Summer calls for some light yummy vegetable recipe. Enter Okra!
Unlike the heavy deep fried bhindi (okra) which no doubt tastes yummy, this is a lighter version without compromising on the flavor. The air fryer gives the okra the needed crispness without lots of oil and the curry (masala) gives the pop of flavor.

Air Fryer Bhindi Masala (Okra Curry)
Easy Pakistani style Bhindi Masala (Okra Curry) recipe consists of air fried okra smoothes in a garlicky, onion and tomato curry. Less oil means a lighter curry!
Equipment
- Air Fyer
- Pan
- Cutting Board
- Knife
- Bowl
Ingredients
- 2 lbs Fresh Bhindi (Okra)
- 1 medium Onion
- 2 medium Tomatoes
- 1 Green Chilli
- 1/2 bunch Cilantro
- 4 cloves Garlic
- 1/2 inch Ginger
- 1/2 Lemon
- 1 tsp Salt
- 2-3 tbsp Olive Oil
- 1/2 tsp Red Chilli Powder
- 1/4 tsp Turmeric Powder
- 1 tsp Cumin Seeds
- 3/4 tsp Coriander Powder
- 1/2 tsp Kalongi (Black Nigella Seeds) (Optional)
Instructions
- Wash and completely dry the okra (bhindi).
- Chop into small pieces (less then 1/2 inch).
- Chop onion, tomatoes, green chilli and cilantro.
- Crush the garlic and ginger.
- Pre-Heat the Air-fryer. Once hot, spray with oil and add the okra.
- Cooking time and tempeture will vary with each model. Just make sure the okra does not get too crisp or burn. Approx 15-18 minutes at 375 F.
- Meanwhile add the olive oil to a pan and saute onion. Once it becomes translucent, add green chilli, tomatoes and all the spices (salt, red chilli powder, cumin seeds, ground coriander, nigella).
- Once the masala (curry) is ready, add the air fryed okra and mix. Cover with a lid let it sit for 5 mins on low heat.
- Just before serving sqeeze the lemon and garnish with fresh cilantro.
- Enjoy with rice, naan, roti.
Notes
- If you want to enjoy the Bhindi (Okra) straight from the Air fryer without curry, add all the spices and lemon juice directly to okra and enjoy crispy okra.
- Â This is the brand I always use for oil spray.
- Do not overcrowd the air fryer as it will result in soggy bhindi.
- Toss it half way through to ensure even cooking.
