Crunchy on the outside but soft on the inside, one bite and you&#8217;ll go all in.\u00a0Pair it with <a href=\"https:\/\/www.insearchofsukoon.com\/\/recipe\/mint-sauce-podinay-ki-chutney-recipe\/\">Mint Chutney <\/a>or <a href=\"https:\/\/www.insearchofsukoon.com\/\/recipe\/recipe-for-tamarind-sauce-imli-ki-chutney\/\">Imli ki Chutney<\/a>\u00a0for that oomph factor. (<em>Kachori recipe<\/em> <em>adapted from\u00a0Cook with Faiza<\/em>).<\/h4>\n<h3><\/h3>\n<h3><span style=\"text-decoration: underline;\"><em>INGREDIENTS FOR THE DOUGH:<\/em><\/span><\/h3>\n<ul>\n<li>\n<h4>200 g -All Purpose Flour<\/h4>\n<\/li>\n<li>\n<h4>1\/2 tsp -Salt<\/h4>\n<\/li>\n<li>\n<h4>3\/4\u00a0tsp &#8211; Cumin<\/h4>\n<\/li>\n<li>\n<h4>Water<\/h4>\n<\/li>\n<\/ul>\n<h3><span style=\"text-decoration: underline;\"><em>INGREDIENTS FOR THE LAYERING BATTER:<\/em><\/span><\/h3>\n<ul>\n<li>\n<h4>2 tbsp.- All Purpose Flour<\/h4>\n<\/li>\n<li>\n<h4>6-8 tbsp &#8211; Butter\/ Ghee (Room Temperature)<\/h4>\n<\/li>\n<\/ul>\n<h4><\/h4>\n<h3><span style=\"text-decoration: underline;\"><em>INGREDIENTS FOR THE FILLING:<\/em><\/span><\/h3>\n<ul>\n<li>\n<h4>\u00a01 lb- Ground Beef\/ Chicken<\/h4>\n<\/li>\n<li>\n<h4>1 &#8211; Onion (med)<\/h4>\n<\/li>\n<li>\n<h4>1\/2 tsp- Red Chilli Powder<\/h4>\n<\/li>\n<li>\n<h4>1\/2 tsp- Black Pepper Powder<\/h4>\n<\/li>\n<li>\n<h4>1\/2 tsp- Fenugreek Leaves<\/h4>\n<\/li>\n<li>\n<h4>1\/2 tsp- Turmeric<\/h4>\n<\/li>\n<li>\n<h4>1 tsp- Cumin Powder<\/h4>\n<\/li>\n<li>\n<h4>1 tsp- Coriander Powder<\/h4>\n<\/li>\n<li>\n<h4>2 tsp- Crushed Garlic<\/h4>\n<\/li>\n<li>\n<h4>Pinch of Garam Masala<\/h4>\n<\/li>\n<li>\n<h4>1\/4 Bunch- Cilantro<\/h4>\n<\/li>\n<li>\n<h4>2 &#8211; Green Chillies ( De seeded and chopped)<\/h4>\n<\/li>\n<li>\n<h4>Salt to taste<\/h4>\n<\/li>\n<li>\n<h4>2 tbsp- Olive Oil<\/h4>\n<\/li>\n<\/ul>\n<h4><\/h4>\n<h3><span style=\"text-decoration: underline;\"><em>RECIPE:<\/em><\/span><\/h3>\n<h4>STEP 1:<\/h4>\n<ul>\n<li>\n<h4>Knead the dough to a soft, pliable consistency. Let it rest for 1\/2 hour.<\/h4>\n<\/li>\n<li>\n<h4>Make 4-6 small balls and let them rest for another 10 mins.<\/h4>\n<\/li>\n<li>\n<h4>Mix 2 tbsp flour and ghee\/butter to make a thick batter.<\/h4>\n<\/li>\n<\/ul>\n<h4>STEP 2:<\/h4>\n<ul>\n<li>\n<h4>Put oil in a wok and saute onions till they are translucent.<\/h4>\n<\/li>\n<li>\n<h4>Add ginger and garlic and saute for another minute.<\/h4>\n<\/li>\n<li>\n<h4>Add ground chicken\/beef along with all the spices mentioned.<\/h4>\n<\/li>\n<li>\n<h4>Cook for 15-20 minutes<\/h4>\n<\/li>\n<li>\n<h4>Mix in fresh cilantro and chopped chilli.<\/h4>\n<\/li>\n<li>\n<h4>Once cooled put it on a kitchen towel to drain all the excess oil.<\/h4>\n<\/li>\n<\/ul>\n<h4>STEP 3:<\/h4>\n<ul>\n<li>\n<h4>Roll out the balls into disc shapes.<\/h4>\n<\/li>\n<li>\n<h4>Spread an even layer of batter on top.<\/h4>\n<\/li>\n<li>\n<h4>Fold the disc from one side and applying the batter again. Then fold all the other sides till you get a square.<\/h4>\n<\/li>\n<li>\n<h4>Repeat it will all the balls. Cover and let it rest for\u00a010 minutes<\/h4>\n<\/li>\n<li>\n<h4>Roll out the squares and put 1-2 tbsp of filling in the center. Pick up the sides and pinch them together. Then pick up the sides again and re-pinch, twisting and pressing down in the middle so as to it give a flat shape.<\/h4>\n<\/li>\n<li>\n<h4>Heat oil in a wok and add the kachori. Do not overfill the wok.<\/h4>\n<\/li>\n<li>\n<h4>Once you put in the kachori in the wok,\u00a0lower the heat and let it fry slowly.<\/h4>\n<\/li>\n<li>\n<h4>The kachori will first sink to the bottom and as it cooks, will rise to the top.<\/h4>\n<\/li>\n<li>\n<h4>Fry till they are golden-brown in color.<\/h4>\n<\/li>\n<li>\n<h4>To make sure that the inside is well cooked, place in 400 F pre-heated
